How to Make Energy Bites (My Favorite Healthy Snack!)

Hi there, my friend! It's been a little while! On top of school, work, and music, blogging had to be put off for a bit. But I'm back (at least for today) with a new delicious, energizing treat!

If you're like me, and you want to eat healthy but have no motivation whatsoever, this recipe is absolutely for you! These give you protein, energy, plus your daily dose of chocolate. They're also perfect for an on-the-go work/school snack.

I love this recipe because it's super flexible, and you can substitute almost every ingredient. I honestly don't even use the written proportions, I just throw in all the ingredients until it tastes right.

I personally find it annoying when I'm reading a recipe on a blog but the author goes on and on about some crazy story of how her cat was walking around the house and it reminded her of her favorite childhood treat and so she made it for her kids and it was so emotional and blah, blah, blah. So, onto the recipe!

ENERGY BITES RECIPE

INGREDIENTS

1/2 cup almond butter (can be substituted with peanut butter)
1/3 cup honey (can be substituted with maple syrup)
1 cup rolled oats
2 tsp vanilla
1 tbsp chia seeds (optional)
1/2 cup chocolate chips (optional)

DIRECTIONS

1) Combine the almond butter, honey, oats, and vanilla in a food processor. Add in the chia seeds and chocolate chips (optional).
2) Roll into small, golf-ball sized balls.
3) Enjoy!

TIPS

  • These are yummiest when they're refrigerated
  • If they're too sticky, add more oats
  • If they're too crumbly, add more almond butter
(I promise this recipe makes more energy bites than shown in this picture, but my siblings ate half of them before I could even finish rolling all of them. They're so good!)
